Sandwiches

OK, sandwiches aren't explicitly American or non-American, but I do love them. And recently I've been finding myself munching on quite a few of them. Today, I am going to post a few that I have been digging lately.


Turkey and Roasted Red Pepper
Ingredients
Sliced bloomer or sourdough bread
Margarine/butter
Green pesto
Roasted red pepper (jarred variety is fine, but you may want to pat them dry with a paper towel to prevent them from making the sandwich soggy)
Thick-sliced turkey
Sliced cheddar


Method
Spread butter on one slice, and pesto on the other. Layer sandwich with turkey, cheese and red pepper to your satisfaction. Enjoy.




Thanksgiving in a sandwich
Ingredients
Granary/brown bread
Thick-sliced turkey
Sliced cheddar
Rocket (arugula)
Mayonaisse
Cranberry sauce


Method
Toast bread. Spread mayo on one slice and cranberry sauce on the other. Layer with turkey, cheese and rocket (arugula). Enjoy.




Salami toastie/panini
Ingredients
Ciabatta roll
Sliced salami
Grated mozzarella
Sliced tomato
Red pesto (I recommend sun-dried tomato)


Method
Preheat grill (broiler). Slice ciabatta roll and toast under grill until lightly browned. Remove roll from oven and spread red pesto on both sides. Layer bottom with salami and grated cheese; layer tomato on the other. Pop under the grill for another minute or two until cheese is melted. Enjoy.


Alternatively, if you have a panini press, you could assemble the sandwich as above and toast the sandwich in the panini maker.




The Sicilian (sorry Benugo, I totally stole your recipe)
Ingredients
1 Chicken breast, diced
Mozarella, diced
Red pesto (again, I recommend sun-dried tomato)
Ciabatta roll
Spinach
Sliced tomato


Preheat grill (broiler). Slice the ciabatta roll and toast under the grill one or two minutes until lightly browned. Meanwhile, mix diced chicken, mozarella and red pesto together in a bowl. Once bread is toasted, spread chicken mixture over one half of the sandwich and tomato on the other. Put back under the grill for another minute or two. Remove sandwich halves from oven, place spinach on sandwich to complete. Enjoy!


Alternatively, sandwich can be assembled as above and toasted in a panini press instead of grilling in the oven.
